Perhaps because they’re roots, we tend to think of beets as a winter vegetable. But you can tell when you see fresh leaves on bunched beets that they are newly harvested, and that can be almost any time of year. Onions are fresh in summer and can often be found in farmers’ markets, with a portion of their long green tops still attached. Inside they are juicy and sweet, perfect with the earthy flavors of the beets. The combination of beets and onions is delicious and classic.
