Made with the blanched creamy hearts of escarole and yellow-skinned pears, this salad has a tender and delicate appearance; red chicories (radicchio) and red skinned pears make a salad with quite a lot of drama. Both combinations, however, bring together the slightly bitter taste of the greens and the sweetness of fruit. Newly harvested walnuts with their flawless, unspoiled flavor are perfect with the pears and the cheese.
