This can easily be a main-course salad for a summer lunch or dinner. The summer produce is bright and colorful, and there’s a pleasing range of textures, from the crisp peppers to the soft butter beans. Anything that comes fresh from a garden would make it that much better—a few bush beans, some radishes or peas, a fresh red onion. The small leaves of purple salad savoy (ornamental kale), shredded radicchio, or small leaves of red lettuces all make beautiful garnishes.
