Serve this as an appetizer or a light, inexpensive spring or summer lunch. A heap of tender, warm beans—plump limas or cannellini beans—is surrounded by smaller piles of diced vegetables and herbs and served with a cruet of fine olive oil and wedges of lemon. Each person drizzles oil over the beans and tosses them with the condiments. The oil is warmed by the heat of the beans, and the flavors explode and rise in the steam. Very simple, but a delight.
