The smoky, dark flavors of dried tomatoes and mushrooms give a wintry feel to this dish. Sun-dried tomatoes that haven’t been packed in oil work very well in the sauce, but oil-packed tomatoes can be used too. They needn’t, of course, be soaked in hot water first.
