This delicate pasta dish is easy to put together. If you’re inspired to make your own ricotta, be sure to try it with pasta—its texture is much finer and less granular than that of most commercial brands. Both whole wheat and spinach noodles are particularly good with the mixture of ricotta and walnuts.

The amounts given here are flexible. If you prefer a richer pasta, use cream. For a lighter one, use milk or the pasta water for the liquid. It’s best to have everything at room temp
