The herb-flavored fresh cheese is delicious in ravioli. The creamy texture can be repeated in the sauce by using aromatic white sauce, or the ravioli can be served with something more brothy, such as mushroom sauce or the garlic soup. If you’re using the cream sauce, garnish the ravioli with finely chopped roasted pine nuts or walnuts or golden fried bread crumbs for textural contrast.
