Once the asparagus season has gone on for a while, we can feel comfortable venturing into stronger seasonings, such as brown butter with its toasted, nutty taste. The asparagus can either be dressed while hot and served with thin shavings of cheese or cooked first and later heated in the oven with the butter and a covering of cheese.
