Tomatoes, a splash of cream, and a few chopped basil leaves are all that’s needed for this summery gratin. It takes about a minute to assemble and 12 minutes in a very hot oven. The creamy tomato-scented sauce will be on the thin side (unless you reduce the cream first on top of the stove) but it can be absorbed by dry fingers of toast.

Italian basil always tastes wonderful with tomatoes, but try the cinnamon variety as well, and not just the leaves but also the purple bracts and their blossoms. The flavor is exotic, and the colors are beautiful.
