These can be ready, from start to finish, in about 10 minutes. The feta cheese is sharp and tangy and makes even so-so tomatoes taste pretty good. This would be a fine accompaniment to a lunch or dinner omelet.

Ingredients

  • 2 medium-sized or large firm but ripe tomatoes
  • 2 to 3 ounces feta cheese
  • 2 teaspoons

Method

Preheat the broiler. Slice the tomatoes into rounds, a little less than ½ inch thick, and overlap them in a baking dish. Crumble the cheese over the top, add half the chopped herbs, and drizzle over a teaspoon of the olive oil. Place the dish a few inches below the heat source and broil until the chees
