Celery is delicious as a cooked vegetable. It takes less than 10 minutes to assemble this dish and 25 minutes to bake it. It holds well and can be easily reheated.

Fennel is also wonderful prepared this way. Quarter the bulbs and prepare them exactly the same way.

Ingredients

  • 6 celery stalks, cut into 3-inch lengths
  • 3 leeks, white parts only, halved lengthwise and cut into 3-inch lengths
  • salt

Method

Preheat the oven to 375°F. Cut the celery and leeks as suggested. Scrape the celery with a vegetable peeler if the stalks are rough and thoroughly wash the leeks. Tie the leeks together in a little bundle. Bring a large pan of water to a boil; add salt to taste and the celery. Parboil
