The hot chili and sweet corn are quite compatible. Make a chili butter by working a little ground red chili into soft butter. Season with the zest and juice of either lime or orange and salt to taste. Or make a butter with finely diced jalapeños, the lime zest and juice, and some finely chopped cilantro. Remember, the chili gains in strength with time.
For similar flavors without the butter, serve the grilled corn with cilantro salsa.
