This seasoned butter was suggested by Elizabeth David. Though it may sound odd, the combination of onions with cinnamon is perfectly right. A pinch of cayenne pepper or ground New Mexican chili keeps it piquant and on the savory side. Grill the onions as suggested, and spread the following butter over them.
Work the butter with the cinnamon and cayenne. Add salt to taste and the lemon juice. Chill until ready to use; then let the butter come to room temperature before using it.
