These potatoes emerge tasting as if they’ve been cooked over a wood fire. They take little or no oil and are clothed with the scent of the herbs and garlic. Although potatoes sound like wintry fare, they in fact are freshest and most delicate in the summer, and the same is true for garlic. Try them in the summer, especially if you live where the evenings are cool.
