Falafel, the tasty Middle Eastern mixture of chick-peas, yellow peas, wheat, and herbs, is made into a thick batter, shaped into cakes, and fried. You could make this wholesome, delicious food from scratch, but it is widely available in health food stores, and the quality is excellent. The mix is useful to have around; it needs only to be combined with water and then fried lightly in olive oil.
