Fresh herbs—whether a single branch of marjoram leaves or a handful of mixed herbs—always improve eggs. Parsley and chervil, chives, tarragon, small amounts of lovage, plenty of marjoram, thyme, and torn basil leaves are all good herbs to mix with eggs, though not necessarily all at the same time. Try them in different combinations. It’s always safe to include parsley, chervil, and chives and then vary the accents by including one strong, assertive herb, such as lovage or tarragon.
