White rice with milk is one of the most soothing, comforting foods I know. It can consist of just a bowl of dinner rice with milk poured over it or this luxurious version, in which rice is cooked slowly in milk. When done, it is thick and creamy, like a rice pudding, and naturally sweet from the sugars in the milk. Serve it with additional milk, a pat of butter, and a sprinkling of brown sugar if desired.
