A sweet and different way to eat cornmeal for breakfast. It’s how my dad used to make it, and it’s as nice now as when I was a kid.

Ingredients

  • 1 quart water
  • 1 cup fine yellow cornmeal
  • salt

Method

Bring 3 cups of the water to a boil in a heavy saucepan and mix the fourth cup with the cornmeal to make a slurry to help prevent lumps from forming. Once the water has come to a boil, whisk the slurry into the water. Add salt to taste and the vanilla and cook over very low heat or in a double boiler,
