Not too sweet and very light, these small fritters have the pleasing chewy texture and nutty taste of wild rice. Brown basmati or other brown rice would also have plenty of character and be delicious treated the same way. Serve these fritters with honey or syrup, a squeeze of lemon juice, a dollop of sour cream, or whatever you fancy. These cakes are very moist.
