The wild celery like taste of lovage comes through clearly in this green-flecked butter. Lovage is delicious with anything made with potatoes and makes an interesting variation on the baked-potato-with-butter theme. It’s also good in a sandwich of tomatoes and cucumbers or simply spread on whole wheat bread.

  • ½ cup unsalted butter, at room temperature
  • 3 tablespoons chopped lovage leaves and small shoots

Method

Cream the butter until soft and light; then work in the lovage and shallot. Stir in the lemon zest, a few drops of lemon juice, and pepper to taste.
