Herb blossoms mixed with the fragrant leaves make a beautiful butter that is also very good. Stir this into something plain, like pasta or white beans or rice, where the colors will be as noticeable as the taste.


  • ½ cup unsalted butter, at room temperature
  • 2 to 3 tablespoons finely sliced or chopped mixed fresh basil, particularly opal basil, ma


Cream the butter with the herbs and the cut blossoms until well mixed. Wrap well and let stand until needed or freeze. This butter looks particularly beautiful when rolled into a cylinder and then sliced. All the flecks of color are streaked throughout.
