Mustard butter goes especially well with members of the cabbage family and is also very tasty tossed with fresh noodles and chives.


  • ½ cup unsalted butter, at room temperature
  • 1 teaspoon grated lemon zest
  • lemon juice


Cream the butter with the lemon zest, a few drops of juice, the mustard, parsley, and chives. Taste and add more mustard if you like it stronger. Stir in the shallot and season with coarsely ground black pepper.
