This ivory-colored sauce has the consistency of thick cream and a delicate flavor. A spoonful of walnut oil accentuates the taste of the nuts. The sauce can be left simply as is or embellished with any of the seasonings suggested below.

Walnut sauce goes wonderfully with beans and grilled vegetables and can also be used as a dip for raw vegetables. I like to use it as the sauce in a pita sandwich or serve it over falafel.

This sauce will keep for a week or more in the refrig
