Cherry tomatoes are frequently sweeter and more flavorful than the standard varieties, which don’t really come into their own until late summer. They can provide an excellent little sauce, as long as they’re sweet, during many months of the year. A food mill is helpful here although not absolutely necessary.

This is not a slow-simmering type of sauce but one that is made quickly and seasoned lightly, keeping the tomato flavor fresh and lively. Dried herbs won’t work in this sauce. U
