This is an old family recipe that was used in tea, both to sweeten it and to provide the lemon flavor. The candied walnuts, as well as the lemons, are delicious to suck on after the tea is drunk; hence the name. This conserve can also be used like a marmalade, although it’s a little thin. English muffins or crumpets will catch the syrup. It can also be used as a garnish for lemon desserts or rice puddings.
Since you’ll be eating the skins, use unsprayed fruits if possible.
