Delicate, dry, and sweet, these simple cookies seem to disappear in the mouth. Walnut oil accentuates the flavor of the nuts. These cookies make a perfect accompaniment to fall fruits and compotes, especially Fresh Figs with Ricotta and Honey.
The dough is shaped into logs about ½ inch square and then cut into pieces a little less than ½ inch thick. They end up irregularly shaped, like little nuggets. The dough needs to harden in the refrigerator before baking. It can be shaped into logs and frozen until needed. If frozen, it should be allowed to warm up for 10 or 15 minutes before being baked. It will require a little more baking time than fresh dough.
