Grapefruit peels are so thick that they yield big, plump, soft candies. They can be dusted with sugar and served as sweetmeats after dinner or left plain and used in baking, such as the Cheese Stollen. Ruby or white grapefruit will yield pink or pale yellow candies respectively. Use organically grown fruit in order to be certain the skins aren’t dyed or coated with pesticides.
