Nowadays in Italy, if you do not talk like a foreigner, especially in matters of fashion or food, nobody understands you; so in order to be understood, I should call this side dish not mashed potatoes, but purée of potatoes, or, to use an even more barbarous name,⁷⁴ potatoes mâchées.
