This is a fantastic recipe that has so many uses. If done properly, it can be kept for months in sterile jars. The ginger adds another little dimension; when it comes to which apples to use, I tend to opt for an apple that tastes great and holds up to the long cooking, as most of it will break down but some of it will keep a bit of texture.
