This can easily be made vegetarian by using veggie haggis, which is remarkably close to real Scottish haggis. The good news is that it is also widely available in most supermarkets; in the USA it is sold as veggie crumble. This is also super quick to make; the main skill needed here is poaching an egg. Once you understand how to make them, they are so easy to do and can be prepared in advance.
