Soused herring is a very traditional way of preserving fish. Don’t be mistaken that this will be similar to supermarket rollmop herring – this dish is beautiful and uses one of our most underused fish.
Before the oil boom in the North-East, herring fishing was vital to the local economy and this style of dish would have been commonplace. This is another recipe that would have been developed out of necessity, in order to preserve the fish before the invention of the fridge.
