Grilled Scottish Lobster with a Warm Tomato & Basil Salsa

Scottish lobster is renowned around the world. They are caught and landed all around the Scottish coastline, mainly by smaller local boats, and therefore they help support the local communities’ economy. I get through dozens of lobster, per week, caught not far from the restaurant by one boat. Lobster is a real treat and surprisingly easy to cook and prepare.
