This recipe is a real classic. There is nothing more indulgent than a rack of lamb. It is very similar to a dish I did on MasterChef: The Professionals. The best bit, in my opinion, is the wonderful cheese crust – if you use a mature smoked cheese, the flavour it adds is incredible. When buying the lamb, ask your butcher to French-trim it.
