This is another fantastic recipe – one that was developed at college for student culinary competitions. As you can guess, chefs don’t make black pudding day to day; we normally source it from a butcher. But I told my good friend and colleague Gordon Wallace, who is a master butcher, that I would like to learn how to make it and he let me pick his brain one day. This recipe was developed from that afternoon’s conversation.
