I remember as a kid going to the local butcher’s and buying potted hough for my dad. To be honest, I didn’t have a clue what it was: it was set in a plastic tub and didn’t look nice at all. Knowing what I know now, I wish I had bought two of them.

Most local butchers in Scotland will sell potted hough. It is thought that it originated in Glasgow. ‘Hough’ is the old Scots word for shin. Shin is a very tough cut of meat and takes a long time to cook, but your efforts will be worth it.
