Lorne sausage – or square sausage, as it is sometimes known – is a bit of a mystery, not only in its origins but also in the fact that you never really know what you are going to get until you cook it. In some cases, it shrinks by half and all you are left with is a tray full of molten fat.
The origins of the name are also a mystery. A very famous Glasgow comedian called
