This recipe uses the whole of the broccoli. The stalk is a fabulous ingredient in its own right; it has stacks of flavour and adds a different dimension to this dish. This recipe is jam-packed with ingredients that have loads of flavour and texture. It’s also super simple to make.

Ingredients

  • 1 head of broccoli
  • 85 ml (3 fl oz) white wine vinegar<

Method

  1. Prepare the broccoli by separating the stalk from the head.
  2. Blanch the head of broccoli in boiling salted water for about 90 seconds, then cool immediately in cold water, drain and put to one side.
  3. Thinly slice the stalk and pop it into a pot with the vinegar and honey. I cut the slices with a round cutter just to make them look a little neater. Bring
