This is my kind of food. Once you have all the elements sorted, you can get it all into a pan and finish it. The earthy combination of the potatoes, mushrooms and lentils really works with the dill pickle.

Ingredients

  • 150 g (5 oz) green lentils
  • 2 sprigs thyme

Method

  1. The first thing you need to do is cook the green lentils. Place them in a pan and top up with water. Add the thyme and the garlic, and a little salt and pepper, put on the stove and bring to the boil. Once it comes to the boil, reduce the heat and simmer until the lentils are tender. Once cooked, drain the water off and allow the lentils to cool.
