Kale has become a superhero ingredient over the last few years; I have even started growing it myself. It’s the plant that just keeps giving. Kale can be found everywhere now and is surprisingly tender – just don’t overcook it!

Ingredients

  • 250 g (9 oz) kale
  • 50 g (2

Method

  1. Start by washing and tearing the kale. You want to remove all the centre spines.
  2. Add to a hot pan with the oil and some salt and pepper, and cook for a minute or so, then add the garlic, butter and the lemon zest.
  3. Cook for another couple of minutes and serve.
