This is a fantastic method for making a real classic pudding. Adding some in-season red berries makes it really light and fresh. Cooking the fruit and the crumble mixture separately allows you much more control on the cooking times. It also gives you a very crisp crumble topping.

Ingredients

For the filling

  • 3 Williams pears, peeled and cut into cubes
  • 300 g (11 oz) mixed red fruits

Method

  1. Cook the pears with the granulated sugar, cinnamon and lemon juice until soft and remove from the heat.
  2. Add the red berries whilst the pears are still warm. Mix once. Set aside in the fridge.
  3. For the topping, add all of the ingredients together and rub with your fingertips until the mix resembles breadcrumbs.
