I must admit, Scotland cannot claim semolina pudding as one of its own, but for many people my age it is something we fondly remember growing up with, from school dinners to having it at home. Semolina is a high-gluten wheat grain that is simply built with milk. In many ways it’s very similar to rice pudding. I think the key to a good pudding is to get as much flavour into the milk as possible. You can infuse it with things like cinnamon, vanilla, citrus and cardamom.
