A Selkirk bannock is a very sophisticated, luxurious tea loaf, once a favourite of Queen Victoria. Selkirk bannocks are still made in the Borders. I’ve used a traditional method in this recipe, which will take a bit of elbow grease, but it is worth giving it a go.

This wonderful little loaf was given a mention in the writings of none other than Sir Walter Scott in The Bride of Lammermoor.
