I just love making scones. I’m also not bad at them, the reason being that I have listened to loads of great chefs and bakers for hints and tips on how to achieve the ultimate scone. Big things I have learned: that the addition of acid gives incredible lift, and that if you bunch them close together they create moisture between them and stay really light. There is nothing worse than a heavy scone.
