I have been making Scottish tablet for over 30 years. I was first taught the recipe by one of Scotland’s great chefs, Nick Nairn. This is a variation on his brilliant tablet recipe.

When it comes to tablet, I cannot stand it when it is so heavily crystalised it’s like eating a lump of sugar. This should give you a smoother, more palatable eating experience.
