Don’t you just love the name millionaire’s shortbread? Growing up, I always saw this as a real treat. I understood the name to mean it was so lavish and luxurious and such an upgrade from regular shortbread that you would need to be a millionaire to buy it. Apparently, it’s because it is so rich!

Ingredients

  • 250 g (9 oz) plain flour
  • 170 g (6

Method

For the shortbread

  1. Heat the oven to 180°C (350°F). Lightly grease and line a 20 x 20cm (8 x 8in) square baking tin with a lip of at least 3cm (1¼in).
  2. To make the shortbread, mix the flour and caster sugar in a bowl. Rub in the softened butter until the mixture resembles fine breadcrumbs.
  3. Knead the mixture together
