Kyle and Oscar, my great-nephews, love visiting my brother (their grandad) when he is busy lambing, so these lemon cupcakes with marshmallow wool were a real hit! The zest and juice of the fresh lemon gives these cupcakes the perfect citrusy blast – I think even grandad might like one!

Method

This all-in-one method makes for quick easy cupcakes. Preheat your oven to 160°C fan (350°F). Line a muffin tin with paper cases. Put all the cupcake ingredients into a bowl and beat with an electric whisk until evenly combined and smooth.
