We were sitting by the stove one day with Peter’s brother Mark and his fiancée Isla. Tucking into my Carrot & Cardamom Loaf (recipe in my first cookbook), Isla asked, ‘Do you think adding marmalade to a carrot cake would work?’ Well, I didn’t need to be asked twice. I’ve now baked this as a loaf many times, but I love them as individual muffins topped with a dollop of frosting. Thanks for the inspiration, Isla!
