I know what you’re going to say – what’s the point in making Jaffa Cakes, the shop-bought ones are delicious! And I agree they are tasty, but homemade ones are on another level! The lightness of that well-whipped sponge alongside the tanginess of the marmalade-infused jelly is the perfect accompaniment to the layer of rich, dark chocolate on top.

And why does the recipe make a dozen? Well, that’s how many I can eat in one sitting (without blinking!).
