The Auld Alliance was signed in 1295 between the kingdoms of Scotland and France. It wasn’t simply a military alliance: it was based on a long-established friendship between the two countries. Over 700 years later, I’m bringing the alliance back by taking the best French sandwich and giving it a Scottish twist.

You can find Croque Monsieur on most French bistro menus. Add an egg on top to form a Croque Madame (the name comes from the look of a woman’s hat on top of the
