If you’re a busy crofter or a bread-making novice, this loaf is perfect. All the work is done by the dough while you are sleeping! There is no kneading, fancy equipment or techniques required, and with a bit of preparation the day before, you will have a delicious, freshly baked loaf ready for lunchtime.

Ingredients

  • 500 g (1 lb 2 oz) strong plain white bread flour, plus extra for dusting

Method

Begin preparing your bread the day before you wish to enjoy it. Add together the flour, yeast, olive oil and fine salt in a bowl and mix together. Pour in the water and combine together with a knife to form a dough. Oil some cling film, cover the bowl and place in a warm kitchen to rise for at least 14 hours.
